Casserole Recipes:

Cheesy Ham and Taters:

Feeds 4

  • 1 large bag of Hash Browns O'Brien
  • 2 cans Nacho Cheese Soup
  • 2 pkgs Diced Ham (this is found in the sausage/bacon area at the grocery store)
  • 1 can milk (use empty soup can)
  1. Preheat oven to 350 degrees.
  2. Spray a 9 x 13 pan with butter spray.
  3. Mix the diced ham and hash browns into a large bowl.
  4. Add both cans of cheese soup and milk.
  5. Mix everything together using a large spoon.
  6. Pour into a casserole dish
  7. Bake for 45 minutes or until bubbly and hot.

**Note: Serve with hot buttered rolls or biscuits.


Tater Tot Casserole

Feeds 4

  • 1 1/2 pound 90% lean ground beef
  • 1 cup bread crumbs
  • 1 egg
  • 1 bag of tater tots
  • 1 can of cream of mushroom soup
  • Ketchup
  1. Spray 9 x 13 casserole pan with butter spray.
  2. Preheat oven to 375 degrees.
  3. Mix together the first three ingredients and form into a large meatloaf.
  4. Place meatloaf in the center of the casserole dish.
  5. Pour the tater tots around the meatloaf.
  6. Pour the cream of mushroom soup over the tater tots. (use a spoon if necessary to make sure all tots are covered)
  7. Squirt several lines of ketchup over meatloaf.
  8. Bake for 90 minutes.

**Note: Best served with a vegetable dish.

 

Corn Beef Casserole

Feeds 6-8

  • 1 can corned beef
  • 1 large package egg noodles
  • small box Velveeta cheese
  • 1 can cream of mushroom soup
  • 1/2 cup chopped onion
  • 15 Saltine crackers (crushed)
  • 1/2 soup can of milk
  1. Preheat oven to 350 degrees/
  2. Spray a 9 x 13 casserole dish with pam.
  3. Cook egg noodles to package directions.
  4. Drain noodles
  5. Place half of the egg noodles into bottom of casserole dish.
  6. Layer corned beef and Velveeta cheese.
  7. Cover with remaining noodles.
  8. In a bowl mix soup, onion, and 1/2 can milk.
  9. Pour over casserole.
  10. Sprinkle crushed Saltines on the top.
  11. Bake uncovered for 45 minutes.

Tex Mex Casserole:

Feeds 6

  • 1 bag or box of White rice.
  • Non stick cooking spray
  • 1 10 oz can of Rotel
  • 1 lb. ground beef.
  • 4 cups crushed tortilla chips.
  • 1 15 oz. can of seasoned pinto or chili beans.
  • 1 pound pasteurized cheese product (Velveeta) Sliced green onions
  • Sour cream
  1. Prepare rice according to package direction and set aside.
  2. Brown ground beef
  3. Preheat oven to 350 degrees.
  4. Spray a 9 x 13 casserole dish with cooking spray such as Pam.
  5. In a medium bowl combine the cooked rice, Rotel, and ground beef and set aside.
  6. Cover casserole dish bottom with crushed tortilla chips.
  7. Layer half of the cheese over the chips.
  8. Top with beans and rice, tomato, and ground beef mixture.
  9. Top with remaining cheese.
  10. Bake uncovered for 15 minutes or until cheese is melted.
  11. Garnish with sour cream and green onions, if desired.

**Note: This is also great without meat or chicken instead of beef.
