Easy Breakfast Recipes:

Ham and cheese biscuits:  Makes 8

  • 1 can biscuits
  • 8 eggs
  • 8 slices of ham (lunch meat)
  • 4 slices of cheese (processed)
  1. Bake biscuits per directions on can.
  2. Spray skillet with butter spray.
  3. Fry eggs, flip eggs, pop yolks, flip.
  4. Place 1/2 slice of cheese on each egg.
  5. Cover with one slice of ham.
  6. Place on sliced biscuits.

*Tip: Be sure yokes are cooked so sandwich is easy to eat. Just pop the yolk with a spatula a few minutes before you flip your eggs.

 

 Spam and eggs:

  • 1 can of Spam
  • 6 eggs
  • 1 package of frozen hash brown patties
  1. Defrost hash brown patties in microwave for 1 minute.
  2. Brown hash browns in skillet.
  3. Place hash brown patties on a plate and cover with a paper towel.
  4. Open Spam and cut into slices.
  5. Spray skillet with butter spray
  6. Brown both sides of spam slices
  7. Place spam slices on plate with hash browns.
  8. Spray skillet again with butter spray.
  9. Fry eggs to your desired method.
  10. Serve with toast and a bit of salsa.

 

Scrambled egg and cheese tortilla: Serves 2

  • 4 eggs
  • 1/2 cup milk
  • shredded cheddar cheese
  • flour tortillas
  • hot sauce
  1. Whisk together eggs, milk, salt, and pepper.
  2. Spray skillet with Pam or other non-stick spray.
  3. Heat on medium heat.
  4. Pour egg and milk mixture into skillet.
  5. Using your spatula, scrape the bottom and sides of the skillet. Keep the eggs moving.
  6. Flip eggs around until cooked.
  7. Remove skillet from heat.
  8. Add cheese.
  9. You can either eat tortillas on the side or put your eggs on them and roll them up.
  10. Top with hot sauce or salsa.

Tip: Scrambled eggs can also be done in the microwave but be sure to cover them with a paper towel so they don't pop and make a mess.

 

Fried egg sandwich:   makes 1 sandwich

  • 1 egg
  • 2 slices bread
  • mustard
  1. In a frying pan sprayed with Pam, crack your egg.
  2. Poke yolk with spatula
  3. Fry on one side until the egg white is no longer runny.
  4. Flip egg
  5. Take off heat
  6. Toast bread
  7. Place egg on toast.
  8. Add mustard.

Great, fast breakfast sandwich.

 

Quick Breakfast Bake:    Serves 4

  • 6 eggs
  • 1 small can of biuscuits (4 to a can)
  • 1/2 cup diced ham or lunchmeat
  • 1/2 cup shredded cheese
  • 1/4 cup milk
  1. Preheat oven to 350 degrees.
  2. Spray a 9 x 9 casserole dish or a 9 inch round pie pan with Pam.
  3. Cut biscuits into 4 pieces and place in baking dish.
  4. In a bowl whisk together eggs and milk wish a dash of pepper.
  5. Add ham and cheese.
  6. Mix well
  7. Pour over biscuits.
  8. Bake for 35 minutes.

This recipe is so pretty, its great when you have some overnight guests, and clean up is a breeze.
