Soups and Chili Recipes
Chili
There must be a million recipes for chili. Depending on where you live, some people use macaroni, some use beans and some don't. Some are spicy and some are not. You add what you like and how much you like. This is my version of chili. I hope you like it. Don't forget the cornbread.
- 2 extra large cans of pinto beans. (53 oz)
- 1 lb. of extra lean ground beef
- 1 lb. of hot sausage
- 2 cans diced green chilies
- 2 can diced tomatoes with green peppers.
- 1 can Rotel
- 2 packages chili season.
- Brown hamburger and sausage.
- Drain, rinse and pour into a large pot.
- Add chili season mix now so it sticks to the meat.
- Pour in the rest of your ingredients.
- Let simmer while you make your cornbread.
Topping tips: Sour cream, hot sauce, cheese, onion jalapenos. Be creative.
Hot sauce soup: serves 6
- 4 boneless skinless chicken breasts.
- 3 large jars salsa.
- 1 package flour tortillas
- Preheat oven to 350 degrees.
- Bake chicken breast for 30 minutes.
- Cool and cut chicken into cubes.
- In a large pot add chicken and jars of salsa. (choose from mild or hot salsa for this recipe. We like it HOT)
- Let soup simmer for ten minutes.
*Serve with tortillas for dipping and cooling down your mouth. Enjoy this easy recipe on a cold day. It's great.
Beans and ham:
This recipe can be made in one of two ways. You can buy a ham (picnic or shoulder) and bake your ham for eight hours and use this ham meat in your soup or you can buy diced ham at the grocery store. I personally prefer to buy the picnic ham or shoulder ham and bake it because in my opinion the flavor is better and you can use some of the juice. I use the rest of the ham for other recipes or sandwiches. I will also put some in scrambled eggs. It never goes to waste.
- 2 large cans of pinto beans
- 1 jar picante sauce
- ham
- In a large pot add ingredients. (the amount of ham you use for this soup recipe is dependent on your preference)
- Let simmer for 15 minutes and serve.
Very quick and very easy. I serve corn bread or crackers with my beans and ham.
Vegetable Beef Soup:
- 1 lb lean ground beef
- 1/4 cup chopped onions
- 2 cups diced peeled potatoes
- 1 cup sliced celery
- 1 lb bag of frozen vegetables
- 3 cups water
- 2 cans condensed beef broth (10 oz. each)
- 1 can diced tomatoes, undrained (14.5 oz.)
- 1 tablespoon Worcestershire sauce
- In a large saucepan cook ground beef and onion on medium heat for 5 to 7 minutes.( sir occasionally)
- Drain.
- Stir in all remaining ingredients.
- Heat to boiling
- Reduce heat to low
- Cover pot
- Simmer for 20 minutes or until vegetables are tender.
